The Recipe

For the Lemon Butter:

For the Salmon Cakes:

  • 1 pound fresh salmon, cooked and flaked

Instructions:

  1. Make the Lemon Butter: In a small bowl, combine the softened butter, lemon juice, lemon zest, and parsley. Season with salt and pepper and mix until well combined. Shape the butter into a small log, wrap it in plastic wrap, and freeze for at least 30 minutes, or until firm.

  2. Prepare the Salmon Cakes: In a large bowl, combine the flaked salmon, breadcrumbs, mayonnaise, chives, Dijon mustard, and egg. Season with salt and pepper and mix gently until just combined. Be careful not to overmix.

  3. Assemble the Salmon Cakes: Divide the salmon mixture into 8 equal portions. Take one portion and flatten it in the palm of your hand.
