Step 1: Make the Cake Pops
Strawberry Cake: You can use a boxed strawberry cake mix for convenience or a homemade strawberry cake recipe.
Cherry Frosting: Use a store-bought cherry frosting or make your own from scratch.
Mixing: Crumble the baked and cooled strawberry cake into fine crumbs. Gradually add small amounts of the cherry frosting, mixing with your hands until the mixture is pliable and holds together when you squeeze it. Be careful not to add too much frosting, as it will make the cake pops greasy.
Forming: Roll the cake mixture into 1-1.5 inch balls and place them on a parchment-lined baking sheet.
Chilling: Place the baking sheet in the freezer for about 15-20 minutes to firm up the cake balls.
Step 2: Prepare the Caramel Glaze
Caramel Sauce: You can use a high-quality store-bought caramel sauce or make a simple one from scratch.
Simple Caramel Sauce: In a small saucepan, heat 1 cup of sugar over medium-low heat. Stir constantly until the sugar melts and turns into a deep amber color. Be careful not to burn it. Remove from heat and carefully whisk in 1/2 cup of heavy cream and 4 tablespoons of butter. The mixture will bubble up. Stir until smooth.
Glaze Consistency: To make a glaze that will coat the cake pops well, you may need to thin the caramel sauce. You can do this by adding a small amount of heavy cream, a teaspoon at a time, until it reaches a consistency that's easy to dip in but not too thin that it runs off the pops completely. Keep the glaze warm in a double boiler or in a bowl set over a saucepan of simmering water.
Step 3: Assemble and Decorate
Dipping: Take a cake pop stick and dip the tip into the warm caramel glaze before inserting it halfway into a chilled cake ball. This acts as a "glue" to secure the cake ball to the stick. Return the pops to the freezer for a few minutes to set.
Coating: Once the sticks are secure, dip each cake pop into the warm caramel glaze, turning to coat completely. Gently tap the stick on the side of the bowl to remove any excess glaze.
Setting: Place the finished cake pops in a styrofoam block or a tall glass to dry. You can also place them back on the parchment-lined baking sheet.
Decorations: While the glaze is still wet, you can sprinkle some sea salt, finely chopped nuts, or other decorative sprinkles on top to add texture and flavor.
