Ingredients:

  • 1 cup mayonnaise

  • ½ cup buttermilk

  • 2-3 jalapeños, stemmed and roughly chopped (remove seeds for less heat, or leave some in for more)

  • 2 cloves garlic, peeled

  • ¼ cup fresh cilantro, packed

  • 2 tablespoons fresh chives, finely chopped

  • 1 tablespoon fresh dill, finely chopped

  • 1 teaspoon onion powder

  • ½ teaspoon salt (or to taste)

  • ½ teaspoon black pepper (or to taste)

  • 1-2 teaspoons lime juice (optional, for a little extra tang)

Instructions:

  1. Prepare the base: In a food processor or a high-speed blender, combine the mayonnaise, buttermilk, chopped jalapeños, garlic cloves, and cilantro.

  2. Blend: Process the ingredients until the jalapeños and garlic are completely broken down and the mixture is smooth and creamy. Scrape down the sides of the blender or food processor as needed to ensure everything is well-incorporated.

  3. Add seasonings: Pour the blended mixture into a bowl. Stir in the finely chopped chives, dill, onion powder, salt, and black pepper.

  4. Adjust consistency: The buttermilk will determine the final consistency. If you prefer a thinner dressing, you can add a little more buttermilk, one tablespoon at a time, until you reach your desired consistency.

  5. Taste and adjust: Taste the dressing and adjust the seasonings. You may want to add more salt, pepper, or a squeeze of lime juice for brightness.

  6. Chill: For the best flavor, cover the bowl and refrigerate the dressing for at least 30 minutes. This allows the flavors to meld together and the dressing to thicken slightly.

  7. Serve: Stir well before serving. The dressing will keep in an airtight container in the refrigerator for up to one week.

Tips for Customization:

  • For more heat: Leave all the seeds and membranes in the jalapeños. You can also add a pinch of cayenne pepper.

  • For a smoky flavor: Roast the jalapeños on a grill or in a hot oven until the skin is blistered and slightly charred before adding them to the recipe.

  • For a thicker dip: Reduce the amount of buttermilk to ¼ cup or less, and add a few more tablespoons of mayonnaise or a bit of sour cream.
