Recipe: "Fried" Tate's Cookie Sandwich with Marshmallow Cream

Recipe: "Fried" Tate's Cookie Sandwich with Marshmallow Cream

Yields: 6 sandwiches

Prep Time: 20 minutes

Freeze Time: 2 hours

Ingredients:

  • 12 Tate's Bake Shop-style chocolate chip cookies (or another brand of thin, crispy chocolate chip cookies)

  • 1 cup marshmallow cream (such as Fluff)

  • 1/2 cup heavy cream

  • 1/4 cup powdered sugar

  • 1/2 tsp vanilla extract

  • 1/4 cup cinnamon-sugar (3 tbsp sugar mixed with 1 tbsp cinnamon)

Instructions:

  1. Prepare the Filling: In a medium bowl, use a hand mixer or a whisk to beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

  2. Fold in the Marshmallow Cream: Gently fold the marshmallow cream into the whipped cream until the mixture is uniform and smooth. Be careful not to overmix, which can deflate the whipped cream.

  3. Assemble the Sandwiches:

    • Lay six cookies on a parchment paper-lined baking sheet.

    • Spread a generous spoonful of the marshmallow cream filling onto the flat side of each cookie.

    • Top with another cookie, gently pressing down to create a sandwich.

  4. Chill and Firm: Place the cookie sandwiches in the freezer for at least 2 hours, or until the filling is firm and the cookies are well-chilled. This step is crucial for the sandwiches to hold their shape and for the filling to have a pleasant, firm texture.

  5. Coat with "Frying" Dust: Just before serving, remove the sandwiches from the freezer. Roll the edges of each sandwich in the cinnamon-sugar mixture, pressing gently to make the coating stick to the marshmallow cream filling.

  6. Serve and Enjoy: Serve the "fried" cookie sandwiches immediately. They are best enjoyed when the filling is still cold and firm.

Tips and Variations:

  • For a true "fried" feel: If you want a more complex texture, you can add crushed Rice Krispies or toasted nuts to the cinnamon-sugar mixture for a crunch.

  • Alternative Fillings: You can substitute the marshmallow cream with a scoop of vanilla ice cream for a classic ice cream sandwich. Or, for a different flavor, use a scoop of chocolate or coffee ice cream.

  • Garnish: Drizzle with chocolate sauce or caramel for an extra touch of decadence.

Enjoy this delicious and innovative take on a cookie sandwich!
