8 corn tostadas (pre-made or homemade)
1 cup shredded Monterey Jack cheese, Oaxaca cheese, or a Mexican cheese blend

1/4 cup salsa or pico de gallo, for serving
1/4 cup sour cream or Mexican crema, for serving
1/4 cup pickled jalapeños or sliced avocado, for serving (optional)
Fresh cilantro, for garnish (optional)
Instructions
Prepare the Tostadas: If you're using pre-made tostadas, skip to the next step. If you're making your own, heat a thin layer of oil in a frying pan over medium-high heat. Fry corn tortillas one at a time until golden and crispy, about 1-2 minutes per side. Transfer to a paper towel-lined plate to drain.
Melt the Cheese: Arrange the tostadas in a single layer on a baking sheet. Sprinkle the shredded cheese evenly over each tostada.
Broil: Place the baking sheet under a preheated broiler. Broil for 1-3 minutes, or until the cheese is melted and bubbly. Watch them carefully to prevent burning.
Assemble and Serve: Remove the tostadas from the oven. If using, sprinkle with crumbled cotija or feta cheese. Top each tostada with a dollop of sour cream or Mexican crema, a spoonful of salsa or pico de gallo, and your choice of pickled jalapeños or avocado slices.
Garnish: Garnish with fresh cilantro if desired. Serve immediately while the cheese is still warm and gooey.
