Tostadas con Queso

This recipe is a simple and delicious way to enjoy the classic combination of cheese and crispy tortillas. It's a perfect snack, appetizer, or a light meal.

Yields: 4 servings

Prep time: 10 minutes

Cook time: 5 minutes

Ingredients

  • 8 corn tostadas (pre-made or homemade)

  • 1 cup shredded Monterey Jack cheese, Oaxaca cheese, or a Mexican cheese blend

  • 1/2 cup crumbled cotija or feta cheese (optional, for a salty kick)

  • 1/4 cup salsa or pico de gallo, for serving

  • 1/4 cup sour cream or Mexican crema, for serving

  • 1/4 cup pickled jalapeños or sliced avocado, for serving (optional)

  • Fresh cilantro, for garnish (optional)

Instructions

  1. Prepare the Tostadas: If you're using pre-made tostadas, skip to the next step. If you're making your own, heat a thin layer of oil in a frying pan over medium-high heat. Fry corn tortillas one at a time until golden and crispy, about 1-2 minutes per side. Transfer to a paper towel-lined plate to drain.

  2. Melt the Cheese: Arrange the tostadas in a single layer on a baking sheet. Sprinkle the shredded cheese evenly over each tostada.

  3. Broil: Place the baking sheet under a preheated broiler. Broil for 1-3 minutes, or until the cheese is melted and bubbly. Watch them carefully to prevent burning.

  4. Assemble and Serve: Remove the tostadas from the oven. If using, sprinkle with crumbled cotija or feta cheese. Top each tostada with a dollop of sour cream or Mexican crema, a spoonful of salsa or pico de gallo, and your choice of pickled jalapeños or avocado slices.

  5. Garnish: Garnish with fresh cilantro if desired. Serve immediately while the cheese is still warm and gooey.

Tips & Variations

  • For a spicier kick: Add a pinch of chili powder or cayenne pepper to the shredded cheese before melting.

  • Add protein: Top the tostadas with seasoned ground beef, shredded chicken, or refried beans before adding the cheese.

  • Make it a full meal: Serve with a side of rice and beans.

  • Freshness is key: Use fresh, high-quality ingredients for the best flavor.

  • Cheese choice: Oaxaca cheese is traditional and melts beautifully, creating long, satisfying strings.1 Monterey Jack is a great substitute.
